I have never really liked the standard FOP that gets loaded by default. On the other hand, I have never found any real documentation on how to customize FOP. Does anyone know of where one could find such information. And yes, I have tried my hand at googling the subject, but something of use thus far.

You probably found this - http://www.asternic.org/ in your hunt, but the issue is that the design and layout is set by FreePBX, so mucking around with the layout and design may either brek FOP or be overwritten on the next reload - may be something to enquire about in the freePBX forums.
