Running the latest build of Incredible Pi and not finding instructions on how to set a static ip. Any help would be much appreciated!

Ideally you want to avoid static ID addresses and use a reserved address instead. A reserved address still means it has the same address but importantly you can still have DHCP allocate an address if your network goes down and you cannot access it on another network which doesn't support your settings.
A static IP is fixed on your system. If you have to move your system (with fixed ip 10.27.27.245) to an other location which uses a different subnet (192.168.0.x) then your system will not be accessible.why would a static IP vs a reserved IP make a difference?
If "your network goes down", how does "another network" gain access, and why would a static IP vs a reserved IP make a difference?
Actually a reserved dynamic IP is always the preferred solution because you never get locked out of your system.
Hi. I cannot set a static address and my router does not support DHCP reserved address.
I do set the static IP and can log into the raspberry from web, but I cannot get out to Internet.
Do you have any ideas ?

First. the above method s no longer the "sanctioned" method for Raspbian Jessie, see this link (I won't comment on the wisdom of this change). Replace the tutorial line "sudo vi /etc/dhcpcd.conf" with simply "nano /etc/dhcpcd.conf"Can you set a static IP on the latest release via the GUI or would it still need to take place via command line? Im not used to the nano editor everyone mentions . My PBX works! just need to change the phones to the PBX ip each time the router restarts which is frustrating. I have other unrelated issues now(NAT), so Im finally trying to sort this out

The best method is probably to set up the static ip by creating an address reservation for your Pi on the router. Most routers support this, but there is no way to tell you exactly how, router interfaces vary too much to hazard a guess.
If you must set it on the Pi, the only way is to edit the config files manually. Nano should be installed by default. Once started, Ctrl-X exits, follow the prompts at the bottom of the screen to save or discard your changes.
There is no way to properly admin a server without some basic command line skills. Take the time get over the initial hurdle and it will be rewarded.
